Gingerbread Men (without butter)

At Christmas, you can’t miss the Cookies with the intense taste and aroma of ginger. However, these classic gingerbread men are without butter.
It’s an easy recipe, and you can get help from your kids… Kids love making cookies, and it’s a wonderful opportunity to do something together with them.

Ingredients for gingerbread men without butter

  • 3 1/3 cups All-purpose flour
  • 1/2 cup Honey
  • 3 tablespoons Sugar
  • 2 Eggs
  • 1 teaspoon Baking soda
  • 1 pinch Ground cinnamon
  • 1 pinch Ground ginger
  • 1 pinch Nutmeg (optional)
  • 1 cup Powdered sugar
  • 2 teaspoons Water
  • 1 teaspoon Red food coloring powder

  • 1 Small pot
  • 1 bowl
  • 1 Whisk
  • 1 Cookie cutter
  • Baking sheet and parchment paper
  • Piping bag
  • 1 small bowl

Preparation of gingerbread men without sugar

  • In a small pot, pour sugar, honey, eggs, and powdered aromas, mix well with a whisk, placing the pot in a water bath, when it is homogenous, let it cool. In a bowl, pour the sifted flour and baking soda, add the mixture and knead until smooth and homogeneous, let it rest for at least two hours in the refrigerator, wrapped in plastic wrap. Roll out the dough, about a quarter inch thick, and cut with cookie cutters. Place the cookies on a baking sheet lined with parchment paper and bake at 350°F in a preheated oven for about 12/15 minutes depending on the consistency you desire. Let them cool and in the meantime, prepare the icing, in a small bowl pour the powdered sugar and two teaspoons of water and mix well. To make red buttons add a teaspoon of red food coloring to the icing. Now you can decorate as you like

Notes

They keep in a closed container for about 10 days. If you want to make a hole to hang them before baking, make a small hole at the top of the head with a toothpick.
