GLUTEN-FREE RICE FRITTERS

Ingredients

  • 17.6 oz Rice
  • 1 cup Milk
  • 3 Eggs
  • 1 Small glass of rum
  • Water as needed
  • 4.23 oz Sugar
  • Grated zest of 1 lemon
  • 1 Pinch of salt
  • 2 Tablespoons of corn starch
  • 1 Vanilla bean
  • Sugar for garnish as needed
  • Oil for frying as needed

Preparation of gluten-free rice fritters

  • Cook the rice in the milk and as the rice absorbs it, add a little water. Add the vanilla bean to the rice and cook until the rice becomes nicely soft. Let it cool. Incorporate the beaten eggs, mixing well, then one at a time add the other ingredients, always stirring. Let the mixture rest for at least an hour; otherwise, the rice will not bind with the other ingredients.
    Heat the oil in a pan, take the mixture with a spoon and place it in the oil to start frying; let them brown well, they should turn a nice brown color.
    Prepare a small plate with sugar. Drain the fritters on absorbent paper and dip them in the sugar you have prepared. Serve on a serving plate.

Notes

Store the gluten-free rice fritters in a paper bag or airtight container, if possible in a cool, dry place so they last longer. You can accompany them with a sweet wine. For those who love liquor, you can drizzle them with rum and then roll them in sugar.
