Gnocchi with broccoli and plant-based cream is a healthy first course that is tasty, creamy, and simple to prepare. The plant-based cream makes the dish creamy and flavorful yet delicate. Broccoli and cream are an excellent combination, so even your children will eat broccoli without noticing it. Consider it as a one-dish meal by just adding more gnocchi and a few more pieces of broccoli.

- 10.5 oz potato gnocchi
- 10.5 oz broccoli
- 1 shallot
- 3.4 fl oz lactose-free plant-based cooking cream
- to taste extra virgin olive oil

- 2 tbsps grated Parmesan cheese

Preparation of Gnocchi with Broccoli and Plant-Based Cream
Let’s see how to prepare gnocchi with broccoli.
First, clean and wash the broccoli well, also cut the stalks into small pieces as I like to include them. Finely chop the shallot, in a pan add a splash of oil, add the chopped shallot and sauté. At this point, add the broccoli and let them brown together with the shallot for 1 minute, then add a bit of water, salt, stir and continue cooking with the lid on low heat. Meanwhile, put the water on the stove for the gnocchi. When the broccoli is cooked, mash them with a fork, throw the gnocchi into the water, pour the plant-based cream into the pan with the broccoli and cook for 1 minute, stirring well. Drain the gnocchi and put them in the pan with the broccoli and cream, sauté for a few minutes to flavor them. Sprinkle with grated Parmesan cheese and serve hot. I didn’t add them, but you can also keep some pieces of broccoli to place on top of the gnocchi.
Notes
Gnocchi is best enjoyed fresh and hot, but if there are leftovers, store them in the refrigerator covered with plastic wrap. Just sauté them in a pan with a splash of oil and some leftover cream. If you don’t like broccoli, you can use Romanesco or cauliflower instead, and you can also replace the cream with a spreadable cheese, which will make the dish creamy.
