LACTOSE-FREE ICE CREAM COOKIES

Lactose-free ice cream cookies ingredients

  • 14 oz Sweetened lactose-free vegetable cream
  • 1 Lactose-free cream cheese
  • 1 Vanillin
  • 1 Instant gelatin
  • to taste Soy drink

  • 1 Bowl

  • 1 Electric whisk

Preparation of lactose-free ice cream cookies

  • In a bowl, pour the vegetable cream, whip a little with the electric whisk, then add the cream cheese, vanillin, and gelatin. Continue whipping; it doesn’t need to be as stiff as whipped cream, just a cream since we added gelatin. Take the dry cookies and dip them in the soy drink, place them in a rectangular container suitable for freezing, make a layer of cookies, then a layer of cream about 0.8 inches, repeat the operation with the cookies and position them on top of the cream. Cover the container with plastic wrap and put it in the freezer for at least 8 hours. When they’re ready, remove the container and wait a few minutes, then with a knife, cut the cream between each cookie, and your ice cream cookies are ready.

Notes

Once cut, if you have any left over, wrap them in plastic wrap and store them in the freezer.
