Ingredients for Legume Fit Pasta

  • 2.5 oz fit line pasta
  • 2 quarts water
  • 2 bell peppers (yellow and red)
  • 1 tablespoon tomato sauce
  • 1 tablespoon extra virgin olive oil
  • 1 oz walnuts
  • 1.75 oz blanched almonds
  • to taste grated Parmesan cheese
  • to taste salt

Preparation of Legume Fit Pasta

Let’s see how to prepare legume fit pasta with bell pepper pesto.

First, put a pot with water and salt on the stove. In the meanwhile, clean and thoroughly wash the tomato and bell peppers, cut everything into pieces, and put the oil in a pot. As soon as it heats up, add the bell peppers, tomato, and salt. Cook for about 10 minutes until they soften slightly. Then pour into the blender glass, add the walnuts and almonds, and blend well until it becomes a nice cream.

  • When it starts boiling, pour the pasta and cook it. When it is almost done, pour the prepared cream into a pan and heat it. Drain the pasta and add it to the cream, then add a generous handful of grated Parmesan cheese. Mix well until the pasta is well seasoned. Now it is ready to be plated and served! Enjoy your meal!

The fit pasta, if left over, should be stored in the refrigerator in a closed container. Just heat it for a few minutes.
