- 1 pre-cooked cotechino
- 8.8 oz dried lentils
- 1 onion
- to taste extra virgin olive oil
- to taste salt and pepper
New Year’s Eve Lentils and Cotechino Steps
Let’s see how to prepare lentils and cotechino on New Year’s Eve.
First of all, you need to rinse the lentils under running water, then put them in a bowl with plenty of cold water and let them soak for at least 2 hours.
After 2 hours, clean the onion and chop it finely, then sauté with a bit of oil in a pot, drain the lentils and add them to the onion, sautéing for a few minutes while stirring, then add a bit of hot water, adjust salt and pepper, cover with a lid and cook on low heat, stirring occasionally until fully cooked, leave them slightly al dente to avoid them getting mushy. Add more water if necessary.In the meantime, prepare the cotechino, in a pot full of cold water, place the cotechino with its sealed packaging horizontally, put it on the heat and bring to a boil, then cook for the minutes indicated on the package, usually 20/25 minutes. Once cooked, remove from heat, cut one side of the package and drain the liquid inside the cotechino, cut it into slices, you can remove the cooked rind or leave it, as you prefer.
Take a serving tray, preferably shallow, fill it with the hot lentils and place all the slices of cotechino in the center and serve hot.
Notes
Lentils and cotechino on New Year’s Eve are already delicious as they are, but if you want them even more flavorful, you can add a bit of smoked bacon when sautéing the onion.
