Lentils and potatoes for New Year’s Eve are a different version from the classic lentils. A simple but very tasty recipe. I encourage you to try them, you’ll be licking your chops, and I’m sure you’ll manage to get your kids to eat them… They are a delightful dish considered complete, perfect for New Year’s Eve dinner, but it’s a dish you can enjoy all year round.

Ingredients for Lentils and Potatoes for New Year’s Eve
- 4 Potatoes
- 3.5 oz Dried lentils (or 2 cans of pre-cooked lentils)
- 1.75 oz Smoked bacon
- to taste Extra virgin olive oil
- 1 Onion
- to taste Salt

Preparation
Let’s see how to prepare lentils and potatoes for New Year’s Eve.
If you use dried lentils, you need to soak them in plenty of water for about 2 hours. In a large pot, you should sauté the bacon with a drizzle of oil. After peeling and washing the potatoes, cut them into small pieces and add them to the bacon. Add half a glass of water, salt, and mix well, then cook with a lid on low heat. Remember it should not be completely dry, and if needed, add more water. I used pre-cooked lentils and added them almost at the end of cooking. If you have dried lentils, after soaking them, add to the potatoes halfway through cooking. When you see they are ready, in a small pot, fry half an onion over low heat, when it wilts, add 2 tablespoons of cornstarch, stirring, a cream will form. Take the cream and pour it along with the potatoes and lentils, mix well and let it rest with the lid on, for about two minutes off the heat so it doesn’t stick. Now they are ready to be served.
Notes
Lentils and potatoes for New Year’s Eve are good as they are… but if you don’t want to give up tradition, serve along with the classic cotechino and they will be simply fantastic. You’ll amaze your guests. They can be stored in the refrigerator covered, for a maximum of two days.
