Ingredients for Lentils and Potatoes on New Year’s Eve

  • 4 Potatoes
  • 3.5 oz Dried Lentils (or 2 cans of pre-cooked lentils)
  • 1.75 oz Smoked Bacon
  • to taste Extra Virgin Olive Oil
  • 1 Onion
  • to taste Salt

Tools

  • 1 Pot
  • 1 Saucepan
  • 1 Glass
  • 1 Peeler

Preparation

  • Let’s see how to prepare lentils and potatoes on New Year’s Eve.

If using dried lentils, soak them in plenty of water for about 2 hours. In a large pot, sauté the bacon with a drizzle of oil. After peeling and washing the potatoes, cut them into small pieces and add them to the bacon. Add half a glass of water, salt, and mix well, then cook covered on low heat. It should not be completely dry and if necessary, add more water. I used pre-cooked lentils and added them almost at the end of cooking. If you have dried lentils, after soaking them, add to the potatoes halfway through cooking. When they seem ready, in a saucepan, sauté half an onion on low heat, when it has wilted, add 2 tablespoons of cornstarch, stirring, a cream will form. Take the cream and pour it together with the potatoes and lentils, mix well and let it rest covered for about two minutes off the heat, otherwise it will stick. Now they’re ready to be served.

Notes

Lentils and potatoes on New Year’s Eve are good as they are… but if you don’t want to miss out on tradition, serve them alongside classic cotechino and they will be simply fantastic. You’ll impress your guests. They can be stored in the fridge covered for up to two days.
