Preparation for Linguine with Zucchini, Bacon, and Cheese

  • Let’s see how to prepare the linguine.

In a frying pan, sauté the bacon, adding the garlic clove. When the bacon is well browned, remove the garlic.

Wash the zucchini well and cut them into julienne strips with the appropriate grater, squeeze to remove their water, then add them to the bacon and brown them, add a little pasta cooking water, salt, and finish cooking on low heat.

Take part of the zucchini and bacon and blend it with an immersion blender to create a cream, put it back in the pan, and add the cheese. When it has softened, cook for another minute to allow it to absorb the flavors.

When the pasta is al dente, drain it and finish cooking in the pan. Plate and serve with a generous handful of Parmesan.

Notes

If you want an even stronger flavor, you can add chopped basil or parsley and pepper.
