The Margherita Cake with Cream and Strawberries is a super soft cake, filled with custard and strawberries … a real treat. It is a cake suitable for any occasion, as a dessert, for guests but also for birthdays. There are multiple steps but it is very easy.

Ingredients for Margherita Cake with Cream and Strawberries
- 2 cups flour
- 1/3 cup cornstarch
- 3/4 cup sugar
- 3/4 cup almond milk
- 5 eggs
- 1 packet baking powder
- Half grated lemon zest
- as needed powdered sugar
- 10.5 oz strawberries
- as needed crushed pistachios
- 2 cups almond milk

- 1/3 cup cornstarch
- 1 lemon
Preparation of Margherita Cake with Cream and Strawberries
Let’s see how to prepare the cake.
Take the eggs, separate the yolks from the whites. In a bowl, place the yolks with the sugar and beat well with a whisk until you get a nice soft mixture. Add the seed oil then the milk, mixing well. Then add the flour and sifted cornstarch little by little, the baking powder, and the grated lemon zest. In another bowl, whip the egg whites until stiff and fold into the prepared mixture, mixing from bottom to top. Pour into a 9/10-inch springform pan lined with parchment paper. Bake in a preheated oven at 330/340°F for about 45 minutes. When ready, remove the cake from the oven and let it cool before filling it.
In the meantime, heat the milk with the lemon zest, in a bowl mix eggs and sugar well, then add the cornstarch. Pour the hot milk into the mixture removing the zest and stirring well. Place on the stove over low heat and bring to a boil for about 3 minutes to thicken. Let it cool. Clean and wash the strawberries, dry them a bit, and then cut them into pieces, divide the cake, and soak with almond milk. When the cream is cold, fill the cake with a nice layer, add the sliced strawberries, and sprinkle with powdered sugar.
Notes
Keep in the refrigerator because of the cream, for about 2/3 days.
