  • 1 melon
  • 20 shrimp
  • 5.3 oz feta
  • to taste pitted black olives
  • to taste salt
  • to taste extra virgin olive oil

Preparation of Melon, Shrimp, and Feta Salad

  • Let’s see how to prepare the melon salad.

    First of all, we need to clean the shrimp by removing the shell and the black intestinal vein by making an incision on the back. Wash well under running water.

    Cut the melon in half and remove the seeds. Use the peeler to create strips or cut it into pieces. Slice the olives and cut the feta into pieces. Take a small pot and bring some salted water to a boil. Once boiling, add the shrimp and drain after one minute. Take a flat plate and arrange the melon slices slightly rolled, add a few lettuce leaves in the center and place some shrimp on top. Now add the feta and olives. Garnish the plate with some lettuce leaves. Dress everything with a drizzle of oil and salt and serve immediately.

Notes

The melon salad is already delicious as is, but if you want it even richer, you can add chopped tomatoes, and pumpkin and sunflower seeds. It’s excellent accompanied by a cocktail sauce.
