Mimosa Muffins with a Surprise
Today I present to you the recipe for mimosa muffins.
A very delicious treat suitable for International Women’s Day , but also great for an afternoon snack with friends accompanied by a great coffee.

Ingredients for Mimosa Muffins with a Surprise
- 3/4 cup Flour
- 1/2 cup Sugar
- 3 Eggs
- Half packet Baking powder
- Lemon zest
- to taste Hazelnut spread
- to taste Custard

- 1 Muffin Pan
- 1 Electric Whisk
Preparation for Mimosa Muffins
Let’s see how to prepare the muffins.
In a bowl, beat the eggs and sugar, add the sifted flour, baking powder, and lemon zest, mix well. Pour the mixture into greased and floured muffin cups or molds, bake at 350°F for about 15-20 minutes. Be sure to check the baking with a toothpick, as baking times vary from oven to oven. Once baked, let them cool. Take the muffins and turn them upside down, cut out the center making a hole and fill it with hazelnut spread. The remaining part of the muffin, cut it all into small pieces. Spread a little cream around the whole muffin, take the cut pieces and sprinkle them around the muffin, plate and serve. You can also accompany them with some cream or chopped fruit.
Notes
They keep for 2/3 days in the refrigerator in a closed container.
