Mixed Salad with Peppers and Cucumbers

A fresh, light, and very quick salad to prepare, perfect for a light lunch, perhaps accompanied by some bread croutons or simply as a side for your main dishes.

  • 7 oz Lettuce
  • 1 Bell Pepper (Large)
  • 1 Onion
  • 2 Cucumbers
  • to taste Salt
  • to taste Extra virgin olive oil
  • 2 tbsps Balsamic Vinegar (or wine vinegar)

Preparation for Mixed Salad with Peppers and Cucumbers

  • Let’s see how to prepare the mixed salad.

    First, wash the lettuce leaves well and let them drain thoroughly. Clean the onion and slice it; I left them round, but you can cut them into small pieces. Wash the cucumbers, cut off the ends and rub them together in a circular motion; this removes the bitterness, then slice them. Wash the bell pepper, cut it in half, remove the seeds and white filaments, then cut into thin strips. Assemble the salad in a large bowl and season with salt, oil, and balsamic vinegar; your salad is ready to be served.

    Naturally, you can add whatever you like. As it is, it’s ideal for hot days or for those who want to stay light since it has few calories, but you can add a crunchy note with bread croutons or chopped nuts or even add some cheese.

Notes

Once dressed, the salad should be consumed within a few hours as it will wilt. I left the cucumber skin on, but you can remove it if you prefer.
