Orange Ricotta Fritters

Orange ricotta fritters are delicious and soft, they are a fluffy, very tasty fried dessert that is easy to prepare, typical of Carnival and loved by everyone. There are many variations, today I offer them with ricotta and orange.

Ingredients for Orange Ricotta Fritters

  • 1 cup all-purpose flour
  • 3 tbsps cornstarch
  • 3 oz sheep ricotta (or cow ricotta)
  • 1/4 cup sugar (+ for garnish)
  • 2 egg yolks
  • 3 tbsps butter
  • Half sachet baking powder
  • 1 orange zest
  • 1 tbsp orange juice
  • as needed vegetable oil (for frying)

Preparation of Orange Ricotta Fritters

  • Let’s see how to prepare orange ricotta fritters

    First, in a bowl, pour the sifted flour and cornstarch with the baking powder, add the sugar, the grated orange zest, the ricotta, the melted butter, the egg yolks, and the orange juice and mix with a spoon. When it starts to blend, knead with your hands until it becomes a homogeneous dough, form a ball, cover with plastic wrap, and let it rest for about 20 minutes.

  • After the resting time, form the fritters by taking small pieces of 12/15g, roll each piece with your palms, forming the fritters. Fill a high-sided pot with oil and heat it. When the oil is hot, immerse the prepared balls and fry until golden, being careful not to overcook them. Turn them and remove them from the oil with a slotted spoon and let them drain quickly on absorbent paper, then cover with granulated sugar. Continue with all the fritters. I recommend changing the oil halfway through cooking.

    The fritters are now ready to be enjoyed

Notes

Here’s a tip: if you put a ball in the oil and it goes to the bottom, it means the oil is not yet ready. If the ball starts to color and puff up a little, it means the temperature is right. If they color too much, lower the heat or temporarily move the pot off the flame.

If any fritters are left, they can be stored in a closed container or directly in the oven for 3/4 days.
