Potato Brie and Mozzarella Pie

The potato brie and mozzarella pie is a dish that everyone likes, even children. It’s easy to prepare, with few and inexpensive ingredients, and you’ll make a really tasty dish that is finger-licking good, perfect as an appetizer or even as a main dish, perhaps accompanied by a nice salad or legumes.

  • 3 potatoes (large)
  • 1 mozzarella
  • 3.5 oz brie cheese
  • to taste gluten-free breadcrumbs
  • to taste grated Parmesan cheese
  • 1 tbsp extra virgin olive oil
  • to taste salt and pepper

Let’s see how to prepare the potato pie

First, wash the potatoes well, fill a pot with water, put the potatoes in and cook them. When a fork goes in easily, they are ready; keep in mind that they should remain firm, not soft, otherwise they will absorb too much water. Once cooked, run them under cold water for a few minutes, then peel them, place them in a bowl, and mash them with a potato masher. Add the diced mozzarella and brie, salt, pepper, and oil, and mix well.

  • Line a round baking pan with parchment paper or butter it and sprinkle with breadcrumbs. Pour in the prepared mixture, level it well, cover with breadcrumbs and grated Parmesan cheese, bake in a preheated oven and cook at 392°F for 15 minutes or until the desired golden color is achieved. At this point, the pie is ready to serve.

Notes and Tips

The potato pie can be stored in the refrigerator for about 2 days, covered with plastic wrap.

My version is vegetarian, but you can easily add diced cooked ham or mortadella. You can also substitute the cheeses with those you love the most. If you prepare it and eat it right away, I recommend letting it cool a little first, as it will be easier to cut into portions.
