Preparation of Puff Pastry Roses
Let’s see how to prepare the puff pastry roses
Cut the puff pastry into strips with a pastry wheel, spread cream on one side, then fold the pastry over the cream side, about halfway up the strip. Then roll the strip onto itself and seal laterally with a little water or beaten egg yolk. Repeat with all the strips, place on a baking tray lined with parchment paper, and bake in a preheated oven at 350°F for 10/12 minutes. While they are baking, prepare the glaze by mixing powdered sugar with a few drops of lemon juice in a small bowl until thick, adding 2/3 drops at a time until reaching the desired consistency. Once baked, let them cool slightly before adding the glaze on top. If you don’t like a strong lemon taste, you can use half lemon juice and half water.
Notes
If you don’t like the glaze, you can dust with powdered sugar. If there are leftovers, store them in a sealed container or in the oven for a couple of days.
