- 1 sheet puff pastry
- 1 zucchini (large)
- 3.5 oz spreadable cheese
- to taste tomato pulp (fine)
- to taste oregano
- to taste parsley
- to taste extra virgin olive oil
- to taste salt
- 1 mozzarella

Preparation Puff Pastry Squares
Let’s see how to prepare the puff pastry squares.
First, clean and wash the zucchini, then slice it into rounds. In a small bowl, put the spreadable cheese and work it with a fork until it becomes a smooth cream, add a little chopped parsley and mix. In a bowl, put some tomato pulp, add oregano, salt, and oil, and mix well. Take the puff pastry, roll it out on its parchment paper, and cut it into 12 pieces with a pastry wheel, place it on a baking pan, and prick the dough with a fork. On half of the pieces, spread the prepared cheese leaving the edges free, then place the sliced zucchini on top, season with salt, and add a little oregano. On the remaining puff pastry, spread the prepared tomato, always leaving the edges free, then place the zucchini slices and season with salt. Bake in the hot oven and cook at 356°F for about 12/15 minutes, in the meantime finely chop the mozzarella, when near the end of cooking, remove from the oven and cover with the chopped mozzarella, and bake again until it melts a bit. The tasty squares are ready to enjoy!!!

Of course, you can also fill them with other things with whatever you like. If there are leftovers, keep them for up to 12 hours even inside the oven, otherwise, put them in the refrigerator covered with cling film for a maximum of 2 days, just heat them for a few minutes to make the puff pastry crispy again.
