Quinoa and vegetable soup is a healthy, nutritious, and tasty recipe. It’s great both hot and cold: hot to warm you up on cold days and cold with less broth, like a stew, for warmer seasons.

- 1 cup quinoa mix
- to taste extra virgin olive oil
- to taste grated Parmesan cheese
- to taste salt and pepper
- 2 potatoes

- 1 stalk celery
- 10 stalks Swiss chard
- 3 leaves kale

Preparation of Quinoa and Vegetable Soup
Let’s see how to prepare quinoa soup.
First, clean and wash all the vegetables, cut everything into pieces, prepare the vegetable broth by putting all the cut vegetables in a pot, add the sprig of wild fennel, cover with water, and bring to a boil, salt, and cook on low heat for at least 1 hour. The longer I cook it, the more I like it. When the broth is ready, let it rest for half an hour to enhance the flavors, remove the wild fennel, and once it’s rested, transfer it to a smaller pot, keeping some aside to add later if needed. Boil again and then add the quinoa that had been previously washed, first placed in a dish with water, then rinsed under running water. Adjust the salt and add pepper if you like; you can skip it if you don’t. Cook for about 20 minutes or follow the package instructions. Once cooked, serve and season with a drizzle of oil and a sprinkle of Parmesan if you like, and the dish is ready to enjoy.

If leftovers remain, store them in the fridge in a closed container. Just reheat it a bit to enjoy the next day.
