Ingredients
- 3/4 cup all-purpose flour
- 2 tbsps cornstarch
- 1/2 cup sugar
- 4 eggs
- 1 tbsp unsweetened cocoa powder
- 1/4 cup vegetable oil
- 1 pinch salt
- 2 tsps red food coloring
- 1 tsp baking powder
- 1 cup sweetened non-dairy whipping cream
- 2/3 cup lactose-free condensed milk
- as needed alchermes (or lactose-free milk)

Steps
Let’s see how to prepare the roll.
First, separate the egg yolks from the whites in a bowl, beat the egg whites with a pinch of salt using an electric whisk, when they are whipped add the sugar little by little, then add the yolks one at a time, continuing to mix the whisk, gradually add the vegetable oil. When well blended, add all the powders including the food coloring, mix with a spoon, then use the whisk again until it becomes smooth and homogeneous, then pour onto a baking tray lined with parchment paper, trying to level the mixture well, and bake in a preheated oven at 392°F for about 8/9 minutes. Once ready, let it cool. In the meantime, whip the cream with the electric whisk and once it is whipped, add the lactose-free condensed milk. Once the sponge cake is cold, soak it with pure alchermes or diluted with a little water; if you don’t like it or there are children, soak it with lactose-free or plant-based milk. Fill with the cream, trying to spread it well, leaving the edges free, at this point roll up the sponge cake to form the roll. Cover with cling film and let it rest in the refrigerator for at least half an hour. After this time, take the roll, remove the cling film and sprinkle with powdered sugar, place it on a clean table or a rectangular tray, sprinkle with sugar hearts and place some red roses; you will make a great impression.
Notes
I always recommend checking the baking with a toothpick because it can vary from oven to oven. I decorated the roll only with powdered sugar, but you can also make some whipped cream tufts with a bit of crumbled sponge cake or cover it with cream with berries or strawberries on top. Store in a closed container in the refrigerator for up to 2 days.
