  • 1 eggplant (Large)
  • 1 bell pepper (Large)
  • 3 zucchini (Medium)
  • 1 onion
  • 7 oz ricotta
  • 2 rolls puff pastry (Round)

Steps for Savory Christmas Wreath

  • Let’s see how to prepare the wreaths.

    First, thoroughly wash and clean the vegetables, then on a cutting board chop the vegetables into cubes and finely chop the onion. In a pan, sauté the onion with a bit of oil then add the chopped vegetables, season with salt and pepper, mix well, let it brown for a minute, and then cook over low heat with a lid. If necessary, add a splash of water. The vegetables should be al dente; once ready, let them cool a bit. When they have cooled slightly, add the ricotta and mix well, adjusting the salt. Take the puff pastry, roll it out, add the vegetables and fill the pastry, starting from the outside leaving about 3/4 inch free, you need to make a circle as you see in the photos. When you are done with the filling, with a knife, cut the dough in the center into 8 rectangles, first cutting into 4 then further dividing the dough. Take the tip of each triangle and pull it outwards over the vegetables, then do the same with the remaining dough on the outside, placing it over the vegetables from outside to inside. Using a kitchen brush, brush the pastry with milk or beaten egg yolk. Bake in a hot oven with its parchment paper and cook at 356°F for about 18/20 minutes or until the desired golden brown. When ready, plate on a round dish or cutting board, if you want to use it as a centerpiece, decorate with some balls and a ribbon to make a bow.

Notes

If you have leftover vegetables, they are also delicious as a pasta sauce. If you have leftover Wreath, store it in the refrigerator covered with plastic wrap for up to 2 days; then it will just need a few minutes in the oven to become crispy again.
