It’s an easy and quick recipe, perfect for when you get back and don’t know what to make… no need for leavening… only 20 minutes of rest.. you can fill it as you like, it’s good with everything. I opted for salami, mozzarella, and lettuce… how do you prefer it?

- 2 cups all-purpose flour
- 2 cups whole wheat flour
- 1 1/4 cups water
- 5 tbsp extra virgin olive oil
- 1 tsp baking powder for savory pies
- 1 tsp salt

Preparation of Semi Whole Wheat Flatbread without Lard
Let’s see how to prepare the flatbreads.
In a bowl, put the water, add the oil, half of the flour, the baking powder, and the salt, start mixing with your hands, then add the rest of the flour and continue to mix. Pour the dough onto a floured work surface and continue kneading for at least 10 minutes, it should be nice and smooth. Cover with the bowl and let rest for 20 minutes.
After the time has passed, take the dough and work it into a cylinder, cut it into 6 parts using a spatula, form balls, and roll out the balls with a rolling pin to a thickness of 2/3 millimeters, heat a pan and put a flatbread in it, cook for 2/3 minutes on each side, put the ready flatbread on a plate, continue with the other flatbreads. To keep the flatbreads soft without breaking, either cover them immediately with a lid to create humidity or brush them with water once cooked. At this point, you can fill the flatbreads as you like, I filled mine with lettuce, mozzarella, and Milanese salami.

If you have leftovers, store them in a closed oven, they are delicious to enjoy even cold, otherwise just heat them for a minute.
