The pasta tomato and olive simple and quick is the classic last-minute recipe for those who have little time to cook or are beginners in the kitchen. Consider that tomato paste or tomato puree and olives are usually always in the house. It’s an easy and quick dish while you put the water and cook the pasta… prepare the sauce.

Ingredients for Simple and Quick Tomato and Olive Pasta
- 11 oz pasta
- 2.5 cups tomato pulp (Very fine)
- 1 clove garlic
- 1 bunch parsley
- 5 tbsp green olives (Pitted)
- to taste salt
- to taste extra virgin olive oil
- to taste chili powder
Preparation of Simple and Quick Tomato and Olive Pasta
First, heat the salted water in a pot and boil the pasta.
Meanwhile, in a small pan, put the chopped garlic and a bit of oil and sauté without burning, add the tomato pulp, then the pitted olives cut into rings, a bit of salt, and a bit of chili powder. Mix well, cover with the lid and let it cook on low heat for about 10/12 minutes. At the end of cooking, add the chopped parsley. Once the pasta is ready, toss it for a minute with the prepared sauce. Plate and sprinkle with a bit of chopped parsley.
Notes
You can store leftover sauce in a closed container in the fridge or freeze it in appropriate trays.
