Stuffed pepper rolls are delicious and super easy to prepare … perfect for appetizers or a starter, but also great as a main course. A colorful and cute idea to set the table and especially an idea to get kids to eat peppers.

Ingredients for Stuffed Pepper Rolls

  • 3 red and yellow peppers
  • 8.8 oz stracchino cheese
  • 1 bunch parsley
  • to taste chopped hazelnuts

Preparation

  • Let’s see how to prepare stuffed pepper rolls.

    First, clean and wash the peppers, then cut them into slices, place them on a baking sheet lined with parchment paper, add salt, drizzle with some oil, and bake at 356°F for 8/10 minutes, just enough to soften them. In the meantime, chop the parsley, place the stracchino cheese and parsley in a bowl, and mix well. When the peppers are ready, let them cool a bit, then start filling them with the prepared cream, roll the stuffed pepper onto itself and secure with a toothpick, proceed the same way for all the peppers. Plate them covered with chopped hazelnuts.

Notes

The stuffed rolls can be stored in the refrigerator for a couple of days, you can also add some capers to make them even more delicious.
