- 1 1/2 cups trio quinoa
- 1 package feta
- 2 Zucchini
- to taste cherry tomatoes

Let’s see how to prepare the trio of quinoa.
First of all, prepare the quinoa. You need to rinse it well under running water, then put it in a small pot with salted water and cook for about 10 minutes. Wash the zucchini well and cut them into pieces, wash the cherry tomatoes and cut them in half; if they are very small, you can leave them whole. Chop the onion. Put a drizzle of oil in a pan and sauté the onion, add the chopped zucchini and let them cook, add a little water, halfway through cooking add the tomatoes, when cooked let them cool. In the meantime, cut the feta into cubes, heat a pan, place the feta in it, and grill on both sides, letting it cool. When the quinoa is cooked, drain it well, chop the olives, clean and wash the carrot, and cut it into julienne strips. At this point, in a large bowl, put all the ingredients, season with salt, add a drizzle of oil, and mix well. Your dish is ready to be served.
Notes
If you have leftovers, store them in the fridge in a closed container. If you want it even richer, you can also add eggplants and peppers, cut them into pieces and cook them along with the zucchini.
