The very soft candied cake is a simple and quick cake, perfect for snacks and breakfasts, a cake perfect for the whole family with a scent and taste that reminds you of panettone, in fact you can also prepare it for Christmas holidays.

Ingredients
- 1 2/3 cups all-purpose flour
- 5.3 oz butter
- 2/3 cup sugar
- 3 eggs
- 1 packet baking powder
- 4 tbsp candied fruit
- orange peel (1 orange)
- 1 shot rum

Steps for Very Soft Candied Cake
Let’s see how to prepare the candied cake
First, soak the candied fruit in rum. In a large bowl, place the eggs and sugar and work with the electric whisks until they become light and frothy, melt the butter in a bain-marie or microwave, add it to the mixture and mix well. Gradually add the sifted flour and baking powder, mixing first with a hand whisk or a spoon, then continue with the electric whisks until it becomes smooth and silky, add the grated zest of an orange and the drained candied fruit and mix well.
Pour the mixture into a greased and floured pan. Place in the hot oven and bake at 350°F for 35/40 minutes. I always recommend checking the cooking with a toothpick because it can vary from one oven to another, remember if it comes out dry the cake is cooked.

The cake can be kept for 4/5 days either in the closed oven or in a suitable container; if you want a more indulgent cake you can also cover it with dark chocolate melted with a knob of butter.
