The yogurt plumcake is the classic loaf cake, suitable for breakfast or an afternoon snack, to accompany a cup of tea, milk or simply coffee. It’s an easy and quick recipe to prepare — only 10 minutes….. your children will be happy…. if you make it…..

Ingredients
- 1 small pot (about 125 g / 4.4 oz / 1/2 cup) apricot-flavored yogurt
- 1 1/4 cups (about 150 g) all-purpose flour
- 6 tbsp + 2 tsp (about 50 g) cornstarch (cornflour)
- 3 eggs
- 1 sachet (packet) baking powder
- 7 tbsp (about 100 g / 3.5 fl oz) vegetable oil
- 3/4 cup (about 150 g) granulated sugar
- salt
- grated zest of one lemon
Preparation
Let’s see how to prepare the plumcake.
First of all, in a bowl beat the eggs and sugar well. Add the oil and the yogurt, mix vigorously; then add the sifted flour, cornstarch, baking powder and salt, continuing to mix. Grate the zest of one lemon and give it a final stir. Prepare the loaf pan and grease it with butter or oil. As shown in the video, place a strip of parchment paper to make it easier to remove the plumcake from the pan.
Notes
The plumcake is good as it is, but you can dust it with powdered sugar or serve it with a hazelnut cream.
