- 3 apples
- 2 cups all-purpose flour
- 3 eggs
- 1/2 cup sugar

- 1 packet vanilla

Steps to make the apple and mascarpone cake
To make the apple and mascarpone cake first prepare the apples. Remove the peel, remove the core, slice and then chop 2 apples into small pieces, and slice the third one for the decoration on top. When you’re done with the apples, prepare the cake batter. Place 3 eggs with sugar in a bowl and mix with the electric mixer until the batter is light and slightly frothy. Add the corn oil. Add the mascarpone and stir. Weigh the flour, sift it, add it to the mixture, add the baking powder and vanilla. Stir with a spatula or a wooden spoon.
Finally, add the previously chopped apples. Mix well with the spatula. Meanwhile, preheat the static oven to 350°F. Take a 9-inch cake pan, oil and flour it thoroughly, including the edges, then pour in the mixture. Arrange the apple slices you cut before on top. When the oven is hot, bake the cake in a static oven at 350°F for about 45 minutes. Use a toothpick to check if it’s done. If the toothpick comes out with batter, it’s not ready, it should come out clean.
When it’s cooked, remove it from the oven, let it cool slightly, and you can finish with a dusting of powdered sugar if you like.
Storage and Tips
You can store the apple cake at room temperature under a glass dome or in a cake tin for a couple of days.
