Apple, cinnamon, and pine nut phyllo rolls are really simple, quick, and delicious desserts. They are prepared in no time with phyllo dough, apples, lemon juice, ground cinnamon, and pine nuts, and they are tasty and crunchy. I had a roll of phyllo dough at home, and I usually make spring rolls with it at home, but this time I wanted to try something sweet, so I thought of flavorful rolls that reminded me a bit of strudel flavors. - 3 apples (medium)
- 0.5 oz pine nuts

- 4 teaspoons brown sugar

Steps to make apple, cinnamon, and pine nut phyllo rolls
To make the apple, cinnamon, and pine nut phyllo rolls, first peel the apples, remove the stem, and cut the apples into small pieces. Place them in a saucepan with 4 teaspoons of brown sugar and a few splashes of lemon juice, to taste, and cook the apples for about 5 minutes until they are slightly soft but not too cooked. Add the pine nuts and a generous sprinkle of ground cinnamon, mix everything well to ensure it is well flavored, and turn off the heat. Set aside and let cool.
Now take the phyllo dough roll. I found the one with large sheets at the supermarket, so I divided each sheet into 3 parts. If you have a smaller one, you can divide it into 2 parts. Take the first sheet and brush it with water, then overlap the second sheet and brush it lightly with water so they stick together. Fill the center with a generous tablespoon of apples, then fold the side edges toward the center.
While keeping the filling secure, roll the phyllo starting from the base. To seal them well so they don’t open during baking, brush the bottom well with water. Once ready, place them on a baking tray lined with baking paper, brush them with a bit of extra virgin olive oil, and bake in a preheated static oven at 350 degrees Fahrenheit for about 20 minutes. They should be golden.
Remove from the oven, let cool slightly, and sprinkle with powdered sugar to taste. They are now ready to be eaten!
Storage and Tips
You can store them in an airtight container for 2 days, but they won’t be as crunchy as freshly baked.
