If you wish, you can also add garlic to enhance the flavor even more. The baked gratin artichokes are perfect to pair with meat or fish dishes but are also delicious on their own. Ingredients for preparing baked gratin artichokes
- 4 artichokes (small)
- 4 tablespoons breadcrumbs (heaping)
- 2 tablespoons Pecorino Romano (grated)
- 1 pinch salt
- 1 pinch black pepper
- 2 tablespoons chopped parsley

Steps to make baked gratin artichokes
To prepare the baked gratin artichokes, start by cleaning the artichokes well. Cut off the stem, remove the tough outer leaves, the pink inner part, and any fuzz, then trim the tips. Once well cleaned, cut them in half and then in half again. Place them in a bowl with water and lemon to prevent discoloration. Now place a pot with water and coarse salt on the stove, and when it boils, plunge the artichokes and boil them for about 7 minutes. They should be tender but not too cooked. When cooked, drain and let them cool slightly.
Meanwhile, prepare the coating. In a bowl, put 4 level tablespoons of breadcrumbs, a pinch of salt, and a pinch of black pepper, chopped parsley, a mix of aromatic herbs (you can also find a ready-made glass jar mix with thyme, marjoram, rosemary, and sage), and 2 level tablespoons of grated Pecorino Romano. Now take a baking dish, I conveniently took two small ones, pour a drizzle of extra virgin olive oil, the artichoke slices which will have cooled slightly, sprinkle over the prepared coating, and cover the entire surface well. Pour another drizzle of extra virgin olive oil on top and bake in a preheated ventilated oven at 350°F (180°C) for about 20 minutes. You can then optionally grill them for a couple of minutes to make them more golden.
