Baked Potato Sticks

The baked potato sticks are easy snacks, simple to make but very tasty, perfect to eat at home as an appetizer or aperitif, but also to take around for a picnic or as a side dish, or why not, paired with a board of cold cuts and cheeses. Just a few ingredients are enough, in fact you will need potatoes, corn starch, salt, pepper, if you like you can add aromatic herbs, I used the ones I use to season meat and vegetables with rosemary, sage, and thyme. Then if you like, you can add pecorino cheese as I did or you can add parmesan or omit it. You can get creative and add whatever you like. They will always be delicious and very tasty. Ingredients to Prepare Baked Potato Sticks

  • 14 oz potatoes
  • 1/2 cup cornstarch (maizena)
  • to taste salt
  • to taste black pepper
  • to taste aromatic herbs (rosemary, sage, thyme)
  • to taste chopped parsley
  • 2 tablespoons Pecorino Romano cheese (grated)
  • extra virgin olive oil

Steps to Make Baked Potato Sticks

  • To prepare the baked potato sticks, first peel the potatoes, wash them well, and cut them into pieces. Then put them to cook in a pot with cold water and cook them for about 10 minutes, they should be soft. In a bowl, mash them with a potato masher while they are still hot. Now add to the mixture the salt, black pepper, grated pecorino cheese, aromatic herbs, I chose those I usually use to season meat and vegetables with sage, rosemary, and thyme, the chopped parsley, and finally add the cornstarch. Knead everything until the mixture is compact.

  • Now transfer the potato dough onto a well-floured work surface and start removing a part of the dough to form snakes, like when making gnocchi, try if possible not to make them too large and thick so they will be nice and crispy. Meanwhile, preheat the static oven to 392 degrees Fahrenheit. Place parchment paper on a baking tray and start laying out your sticks. Finally, brush them with extra virgin olive oil and bake for 20 minutes. They should be golden on the surface.

  • Take them out of the oven and let them cool slightly. Now they are ready to be enjoyed! Tasty and delicious!

You can store baked potato sticks for two days in the refrigerator in an airtight container, although it is preferable to consume them immediately.

If you like, you can use grated Parmesan cheese instead of pecorino.
