Steps to make baked scallions with bacon
To prepare the baked scallions with bacon, first take the scallions, remove the hard part of the green leaves, and remove the roots, then wash them well under running water. Start preheating the static oven to 350°F. If your scallions are too large, I recommend cutting them in half; if they are small, keep them as they are. Then place the scallions on a cutting board, take the bacon slices; in this case, I used pancetta coppata that I already had at home, but you can also use smoked bacon slices, which are more convenient to wrap. Place the scallions on a baking tray lined with parchment paper, sprinkle them with salt, and pepper to taste, and grated Grana cheese. Finally, a drizzle of extra virgin olive oil. Bake them for about 30 minutes.
Remove from the oven and let cool slightly. Your scallions are ready to be enjoyed!
