Steps to Make Baked Tagliatelle with Cherry Tomatoes, Anchovies, and Mozzarella
To prepare baked tagliatelle with cherry tomatoes, anchovies, and mozzarella, first put a pot with water and coarse salt on the stove and bring to a boil. When it reaches boiling point, cook the tagliatelle for the time indicated on the package. Meanwhile, prepare the sauce. Wash the cherry tomatoes well, remove the stems, and cut them in half. Also thinly slice half of a white onion. Take a large pot, pour in some extra virgin olive oil, the onion, and sauté for a minute, add the anchovies in oil and let them melt completely, now add the cherry tomatoes, a sprinkle of dried oregano, 1 tablespoon of cooking water, a splash of tomato sauce, and cook everything for 10 minutes.
When the tagliatelle is cooked, pour it into the pan with the cherry tomatoes and sauce, mix well and turn off the heat. Meanwhile, preheat the static oven to 392 °F. Pour all the tagliatelle into a baking dish, add cherry mozzarella balls cut in half on top, and sprinkle everything with grated Pecorino Romano cheese.
Bake for about 15 minutes in grill mode, the mozzarella should melt well. They are ready to eat! Delicious!
Storage and Tips
You can choose cherry mozzarella balls or classic mozzarella, the important thing is to drain it well from the water.
If you do not like anchovies, you can omit them. The same goes for dried oregano. Instead of oregano, you can use fresh basil.
