The baked zucchini rolls with ham and provolone are a really tasty, simple, and appetizing second dish, yet light. The zucchini cooked this way remain very soft. You can prepare them as a main dish or why not even as an appetizer. You can stuff these rolls as you prefer, I had some cooked ham and provolone in the fridge so I opted for a classic filling. Ingredients for preparing baked zucchini rolls with ham and provolone
- 2 zucchini (large)
- 3.5 oz provolone
- 3.5 oz cooked ham
- to taste breadcrumbs
- to taste grated Parmesan
- to taste salt
- to taste extra virgin olive oil

Steps to make baked zucchini rolls with ham and provolone
To prepare the baked zucchini rolls with ham and provolone, first wash the zucchini well, remove the ends, and with the help of a mandoline slicer, cut not too thin zucchini slices, I made them 1/8 inch thick. In one plate, put some extra virgin olive oil, in another put some breadcrumbs, and also add a bit of grated Parmesan and mix well. Massage each zucchini slice with the extra virgin olive oil, then pass it in the breadcrumbs. Then place the prepared slices on a baking tray lined with parchment paper. Add a pinch of salt on top of the slices and bake in a static oven at 400°F for about 15-20 minutes. They should be soft. Take them out, let them cool slightly. Now add a piece of ham and a piece of provolone on the zucchini slice, roll the slice over itself and close it with a toothpick.
Then take a not too large baking dish, grease it with some extra virgin olive oil, then place the prepared rolls on top. Slightly drizzle the rolls with some extra virgin olive oil. Now bake them still at 400°F in a static oven for 10 minutes. Then set the grill function for about 5 minutes.
Take them out, let them cool, and serve!
Storage and tips
You can store the rolls in the fridge for 1 day in an airtight container.
