Steps to make the Christmas surprise plumcake
To prepare the Christmas surprise plumcake, first make the cocoa batter. In a stand mixer or by hand in a bowl, pour the eggs and sugar and whisk until you create a frothy cream, then add the liquids, corn oil, and yogurt. I used berry yogurt here, but you can use plain yogurt or any you prefer. Now add the sifted all-purpose flour and baking powder, and finally add the unsweetened cocoa. Preheat the static oven to 350°F. Pour the cocoa batter onto a baking sheet lined with parchment paper and spread evenly. Bake for about 18 minutes. Remove from the oven and let it cool completely.
Now proceed to make the white batter. In the clean stand mixer bowl, beat the eggs and sugar and whisk well until you create a frothy cream, then add the corn oil and whole milk, add the flour and sifted baking powder, the vanillin packet, and mix well.
Now take the 12-inch loaf pan and oil and flour it well, pour a little white batter into the pan. Then create the Christmas shapes with the cocoa batter; I chose the Christmas tree shape, but you can choose whichever you prefer. Now start arranging the tree shapes on the white base by placing them in the center of the pan.
Then cover the shapes with the remaining batter. Then bake in a static oven at 350°F and cook for about 40 minutes. Then do the toothpick test to check doneness. If you can, always choose a shape that is not too big. Remove from the oven and let cool. Sprinkle with powdered sugar or, if you want it even more indulgent, you can glaze it with dark chocolate.
