With these treats, you can instead prepare coconut snowmen for Christmas. They will have a lot of fun making them.

  • 2 cups ricotta (fresh)
  • 2 1/4 cups grated coconut
  • 1 cup powdered sugar

Steps to prepare coconut and ricotta balls

  • To prepare the coconut and ricotta balls, first put the fresh ricotta in a strainer so it drains well and loses the extra whey.
    Then transfer the fresh ricotta to a large bowl and add the 2 1/4 cups of grated coconut and 1 cup of powdered sugar. Start mixing everything with a wooden spoon and then continue with your hands to create a nice compact dough.

  • Place the dough in the refrigerator to rest for 2 hours so that it firms up and is easier to make balls. At this point, take some dough between your hands and form the balls to your preferred size. Then take a plate and put some grated coconut on it. Roll them inside.

  • Place them in the refrigerator until ready to serve. They are excellent treats to pair with a good cup of hot tea.
