Homemade potato gnocchi are easy and quite quick to prepare. They are one of the basic preparations in cooking. To create good soft gnocchi, first use old potatoes. If you can, mash the potatoes while they are still hot, but wait to work them with the flour, otherwise they will absorb too much and become too hard and dense. Do not work the dough for too long. You can then create the classic gnocchi ridges if you have a gnocchi board at home or, as I did, by using the tines of a fork. - 2.2 lbs potatoes
- 2 1/2 cups all-purpose flour
- 1 egg (medium)

Steps to make homemade potato gnocchi
To prepare potato gnocchi, first put a large pot of water with coarse salt on the stove. Wash the potatoes well with the skin under running water and place them in the pot to cook. Cook them for about 50 minutes. They should be soft. When the potatoes are cooked, drain them from the water, let them cool slightly, peel them, and mash them in a large bowl with a potato masher. In the bowl where you mashed the potatoes, add 1 pinch of salt, 1 medium egg, and start kneading with your hands. Add a little flour at a time and continue kneading. When all the flour is incorporated, take the dough and place it on a board.
Work it with your hands; you should get a soft dough. Cut the dough into pieces, form long logs on the floured board, and create gnocchi using a scraper. Then take each gnocchi and pass it over the tines of a fork to create the stripes, if you don’t have a gnocchi board available.
Then heat water and coarse salt in a pot. When boiling, cook the gnocchi for a couple of minutes. Drain them when they float to the surface. Proceed with the seasoning.

You can freeze them.
Choose the seasoning you prefer; they are delicious with pesto, tomato sauce, or ragu. They are delicious with any sauce.
