Homemade Sausage and Potatoes in a Pan (Trentino Luganegheta)

The homemade sausage and potatoes in a pan, known in our area as “Luganegheta,” is a very simple and humble second course from the Trentino tradition. Typically, it is prepared with polenta or roasted potatoes in a pan. I decided to prepare this luganegheta with the potatoes cooked directly in the same pan, to alleviate the salty taste of the sausage and to flavor the potatoes at the same time. The sausage is first browned without adding any fats, it is pricked, and then deglazed with white wine. It is cooked for about 30 minutes. If you like sausage recipes, you can also try:

Ingredients for Homemade Sausage and Potatoes in a Pan

  • 6 fresh pork sausages, cooked, in a pan
  • 6 potatoes (medium-sized)
  • 1 glass water
  • 1 glass white wine

Steps to Make Homemade Sausage and Potatoes in a Pan

  • To prepare homemade sausage and potatoes in a pan, first take the homemade sausages, prick them with a fork, and place them in a non-stick pan. Pricking the meat will allow the fat to escape, so adding any additional cooking fat will not be necessary. Brown the sausage over medium-high heat for a couple of minutes until it becomes golden. Turn it often so that it browns evenly on both sides. When the sausage is browned, deglaze with half a glass of white wine. If you want, you can cook just the sausage, but if you want to make my dish, add the potatoes which you previously peeled and cut into not too large cubes.

  • Allow the potatoes to lightly brown as well, then pour in half a glass of water to cook the potatoes and sausage, lower the heat, and cook everything for about 30 minutes with a lid. If you see that there’s no more water, add more from time to time.

Storage and Tips

You can store the cooked sausage in the refrigerator for up to 1 day

If you want to make it even more flavorful, you can add black pepper and various spices and herbs like bay leaves. The ones I usually buy are already full of flavor, so I don’t add pepper
