Pasta with Zucchini and Saffron

Pasta with zucchini and saffron is a very simple and quick first course, it can be prepared in a short time, and it will certainly impress at the table. Simple yet full of flavor, perfect for a quick lunch with family or friends. It really requires only a few ingredients. Zucchini, saffron, onion, but if you prefer, you can opt for garlic. In this case, I chose mezze penne rigate because it is a pasta shape often used in our house, but you can use any type of pasta you like. Ingredients for preparing pasta with zucchini and saffron

  • 5.6 oz mezze penne rigate
  • 1 zucchini (large)
  • 1 packet saffron
  • to taste Pecorino Romano (grated)
  • 1 onion (small)
  • to taste salt
  • to taste pepper

Steps to make pasta with zucchini and saffron

  • To prepare pasta with zucchini and saffron, first, bring a pot of water with coarse salt to a boil. In the meantime, clean the zucchini well, cut off the ends, and peel the skin. Slice them first and then dice them into small cubes. Also, thinly slice 1 small white onion. When the water reaches a boil, cook the pasta according to the package instructions. Now heat a non-stick pan with some extra virgin olive oil, sauté the onion for a couple of minutes, and add the zucchini. Salt and pepper them and cook for about 10 minutes until they are soft.

  • Now take the packet of saffron and add it to a small cup with a little warm water, mix well, and set aside. You will add it at the end of cooking. When the pasta is cooked, drain it and add it to the pan with the zucchini, mix well, and add the saffron you prepared earlier. Add a small ladle of cooking water to make the pasta creamy. Finally, off the heat, add some grated Pecorino Romano or Parmesan or Grana Padano, also grated. Your pasta with zucchini and saffron is ready! Serve it and enjoy!

Storage and Tips
