Ingredients to prepare the pear, mascarpone and chocolate chip cake
- 1 1/3 cups (170 g) 00 flour
- 2 pears (medium)
- 2/3 cup (130 g) granulated sugar
- 3 eggs (medium)
- 3 1/2 tbsp (50 ml) whole milk
- 1/4 cup (60 ml) corn oil
- 1 cup (250 g) mascarpone
- 1 packet vanillin
- 1 1/2 tsp (6 g) baking powder
- 1/4 cup (40 g) chocolate chips

Steps to make the pear, mascarpone and chocolate chip cake
To prepare the pear, mascarpone and chocolate chip cake, first beat the eggs with the sugar using an electric mixer or hand mixer until they become pale and frothy. Then add the liquids: first drizzle in the corn oil, then the milk and finally the mascarpone. Mix again, then add the 00 flour, the baking powder and the packet of vanillin. Mix again, then peel and core the pears and cut one pear into small cubes and fold them into the batter. Add the chocolate chips and mix gently with a spatula.
Meanwhile, preheat the conventional oven to 356°F (180°C). Take a 9 in (22 cm) springform pan if you want a taller cake; grease and flour the pan well, then pour in the batter. Arrange the remaining pear cubes on the surface and finish with a sprinkle of brown sugar. Once the oven is hot, bake the cake for about 50 minutes.
Do the toothpick test by inserting it into the center of the cake to check if it’s done. If the toothpick comes out dry, the cake is ready. Remove from the oven and let it cool slightly. Wait a bit before removing it from the pan to avoid breaking it. Your cake is ready to be enjoyed!
Storage and tips
You can store the cake under a glass cloche for a couple of days.
If you don’t like mascarpone you can substitute it with ricotta.
