The pork ribs with paprika in a pan are a perfect main course for a family lunch or dinner, perhaps even during important holidays. The ribs are easy to prepare: first they are marinated with paprika, turmeric and curry, then they are cooked in a pan for about 1 hour. They will become tender, flavorful and well balanced in taste. Adjust the spices and salt to your preference. In Trentino we usually serve the ribs with polenta and sauerkraut. Really delicious! If you like main courses you can also try:

Steps to make pork ribs with paprika in a pan
To prepare the pork ribs with paprika in a pan, first take a large bowl and combine 4 tablespoons of extra virgin olive oil, 3 teaspoons of sweet paprika, 1 teaspoon of curry, two pinches of turmeric, a pinch of salt and a grind of black pepper. Stir well with a spoon and add the ribs. Massage them well so they absorb the flavors. Cover the bowl with plastic wrap and transfer to the refrigerator to marinate for 2 hours.
After two hours, take the ribs and brown them in a large pan with a few tablespoons of extra virgin olive oil over high heat. Now deglaze with 1/2 cup of white wine over high heat and let it evaporate completely. Lower the heat to medium-low, add half a glass of water, 1 tablespoon of brown sugar and 1 tablespoon of wildflower honey. Put the lid on and reduce the heat to the lowest setting. Let the ribs cook for about 1 hour, turning them occasionally.
After 1 hour remove the lid, let the water evaporate (this will take about 10 minutes over medium heat) and then brown the ribs for about 5 minutes. Serve hot, perhaps paired with a good plate of polenta and sauerkraut.
Storage and tips
You can store in the refrigerator for up to 2 days in an airtight container.
If you like, you can add garlic powder. If you want a more flavorful dish you can add hot paprika.
FAQ (Questions and Answers)
Can I use hot paprika instead of sweet paprika?
Yes, you can, but the flavor of the dish will become spicy. It is very intense, so add it little by little to taste.
