The Prussians, or puff pastry fans, are delicious and very quick to make, requiring only 3 ingredients: puff pastry, sugar, and water. The fans or Prussians are very famous cookies, similar to sugar puff pastries, they are rolled from both ends and then cut into slices. The sugar on top helps the pastry become golden and caramelized. Prussians are perfect for children’s breakfast, for the whole family’s snack, great to pair in winter with a hot chocolate, maybe with a sprinkle of cinnamon, but also in summer accompanied by a good cup of tea. In short, they are always good! If you like puff pastry, here are some sweet ideas:

Ingredients to prepare the Prussians
- 1 roll puff pastry (rectangular)
- as needed granulated sugar
- as needed water
Tools
- 1 Baking tray
- Brush
- Parchment paper
Steps to make the Prussians
To prepare the Prussians, first unroll a rectangular puff pastry on a work surface. Take a brush and lightly water the pastry. Now sprinkle granulated sugar over the pastry. Start rolling one end of the puff pastry from the longer side, then the other towards the center. The two parts should meet. Press them well, then wrap the puff pastry with parchment paper and let it rest in the refrigerator for 10 to 30 minutes to firm up the dough and facilitate cutting.
Meanwhile, preheat the static oven to 350°F (180°C). After the resting time, take the puff pastry back. With a sharp knife, cut slices about 0.8 inches (2 cm) thick. Then, take a small bowl with granulated sugar and pass all sides of the Prussians. Place them on the parchment paper, spacing them a bit because they will puff up during baking.
After the first 10 minutes of baking, remove them from the oven and flip them over, then let them cook for about another 10 minutes. They should be nicely golden. Take your Prussians out of the oven. Let them cool slightly and then taste them! Delicious!
