  • 1 roll puff pastry (rectangular)
  • 3.5 oz thinly sliced speck
  • 3.5 oz smoked cheese

Steps to make the puff pastry roses with zucchini, speck, and smoked cheese

  • To prepare the puff pastry roses with zucchini, speck, and smoked cheese, first unroll a rectangular puff pastry roll on a work surface, but a round one works just fine too. Cut the puff pastry into strips about 3/4 inch wide. Trim the ends of the zucchini, wash it well, then use a mandoline to slice it thinly lengthwise, if too wide, cut in half again. Cut the smoked cheese into thin slices. On each strip of pastry, lay the zucchini, thinly sliced speck, and smoked cheese. Fold part of the pastry over the filling to seal it.

  • Roll the strip from the beginning aiming to shape it like a rose. Then place each rose in a muffin tin, well-oiled both on the bottom and sides. Preheat the static oven to 356°F. When the oven is hot, add a drizzle of extra virgin olive oil on top of the roses and bake them for about 30 minutes. They should be lightly golden, so check them and if needed add a few more minutes.
