To prepare the puff pastry roses with zucchini, speck, and smoked cheese, first roll out a rectangular puff pastry sheet on a work surface, but if you have a round one, that’s fine too. Cut the puff pastry into strips about an inch wide. Trim the ends of the zucchini, wash it well, then use a mandoline to cut it into thin lengthwise slices. If they are too wide, cut them in half again. Then take the smoked cheese and try to cut it into thin slices. On each strip of pastry, place the zucchini, thinly sliced speck, and smoked cheese. Fold part of the pastry over the filling to close it.
Roll the strip from the beginning, trying to shape it into a rose. Then place each rose in a muffin mold that is well-oiled both at the bottom and on the sides. Preheat the static oven to 356 degrees Fahrenheit. When the oven is hot, add a splash of extra virgin olive oil on the surface of the roses and bake them for about 30 minutes.
