Roasted Potatoes and Sausages

Roasted potatoes and sausages are an easy and quick second course to prepare. In an hour, you will have a tasty and flavorful dish ready. It’s sure to please the little ones, but not only them! The potatoes, cooked first slightly boiled and then baked, are excellent because they will become crispy on the outside and soft inside. Ingredients for Roasted Potatoes and Sausages

  • 12 oz potatoes (already peeled)
  • 5.3 oz pork sausages
  • 1 tbsp extra virgin olive oil (abundant)
  • to taste aromatic herbs (thyme, rosemary, sage)
  • to taste salt
  • to taste pepper

Steps to Prepare Roasted Potatoes and Sausages

  • To prepare roasted potatoes and sausages, first clean the potatoes well, wash them, then cut them into pieces that are neither too large nor too small. Put a pot with water and coarse salt on the stove. Once boiling, cook the potatoes for about 20 minutes. When cooked, drain them and let them cool. Then put them in a bowl with an abundant tablespoon of extra virgin olive oil, add the aromatic herbs; you can choose those you prefer, I added finely chopped thyme, rosemary, and sage. Season with salt and pepper.

    Preheat the fan oven to 356°F. Now take a baking tray and line it with parchment paper, arrange the potatoes not touching each other. Then, drizzle some oil on top and bake them for about 20 minutes.

  • Meanwhile, cut the sausages into slices, not too thin, or they will dry out during cooking. I chose slightly smoked pork sausages without skin, but you can also choose chicken and turkey if you prefer. After the 20 minutes, add the sausages and let them cook for another 10 minutes. Once done, remove the tray from the oven and let it cool slightly.

Storage and Tips

You can store the sausages and potatoes in an airtight container in the refrigerator for up to 2 days.

If you like sauces, you can accompany the sausages with ketchup or slightly spicy barbecue sauce.
