Perfect for lunch or dinner but also to take on a trip or for a picnic. This time I used a rectangular puff pastry roll but if you have a round one at home, you can use that. Steps for making the savory pie with peppers and potatoes
To prepare the savory pie with peppers and potatoes, first clean the peppers well, wash them, remove the internal white parts and seeds. Cut them first into strips and then into small squares. Peel the potatoes, cut them into cubes. Then take a small red onion and slice it thinly. Now take a large pan, pour some extra virgin olive oil and brown the onion, then add the peppers and potatoes and cook everything for about 20 minutes over low heat, turning occasionally. Towards the end of cooking, salt and pepper to taste.
Let the peppers and potatoes cool. Meanwhile, unroll a rectangular puff pastry roll, place it with the parchment paper on a baking tray. Preheat the static oven to 392°F (200°C). When the peppers and potatoes have cooled, pour them into a large bowl with 1 egg, the mozzarella, and 1 tablespoon of grated Grana Padano, then if you want you can salt again. Pour everything onto the puff pastry and fold the edges so that it does not open during cooking. Bake the savory pie for about 30 minutes. It should be nicely golden.
Take it out of the oven, let it cool slightly, and serve. Delicious and very tasty!
Storage and Tips
You can store the savory pie in the refrigerator for up to 2 days in an airtight container.
If you want, you can use smoked cheese instead of mozzarella.
