The soft cocoa and coffee muffins are very simple and delicious treats, made with sweetened cocoa and coffee. They are uniquely soft, almost melting in your mouth. Ingredients for making soft cocoa and coffee muffins
- 2 cups all-purpose flour
- 2/3 cup brown sugar
- 1 tbsp baking powder
- 3 tbsp sweetened cocoa powder
- 1/2 cup whole milk
- 1/2 cup corn oil
- 1/4 cup coffee
- 1 egg (medium)

Steps to make soft cocoa and coffee muffins
To prepare soft cocoa and coffee muffins, first make a cup of coffee, about 1/4 cup, which will be used shortly to prepare the muffins, so it should be left at room temperature. Pour the sifted all-purpose flour, 1 tbsp of baking powder, brown sugar, and sweetened cocoa powder into a bowl, mix well with a spoon and set aside. In another bowl, pour 1/2 cup of whole milk, 1/2 cup of oil, 1 medium egg, and the 1/4 cup of room temperature coffee. Mix and pour into the flour mixture, stirring to avoid lumps.
Now take a baking tray and place the muffin molds on top, I used silicone ones. Fill the molds with the mixture up to three-quarters full, there should be about 12 molds. Meanwhile, preheat the static oven to 356°F and bake them for about 15 minutes. To be sure, always do the toothpick test (take a toothpick and insert it inside to see if the muffin is cooked; if the mixture sticks, it means they are not yet cooked).
Your soft cocoa and coffee muffins are ready to be served! Let them cool for at least 10 minutes!

Storage and Tips
You can store them in an airtight container for a couple of days
I recommend waiting before removing the muffins from the molds right out of the oven, you risk breaking them. Wait at least 10 minutes
