The Trentino Zelten is a traditional dessert from Trentino Alto Adige, where I live. This dessert is usually made during the Christmas period and is a cake filled with lots of dried fruit. You will find pine nuts, walnuts, raisins, and soft dried figs. Each family passes down its own recipe, so there are several variations. This is my family’s. For this recipe, I used a 9-inch springform pan because I wanted a cake-like height, but if you want it a bit lower, you can also use a 10-inch pan. Ingredients for Trentino Zelten

  • 2 1/2 cups all-purpose flour
  • 7 tbsps butter
  • 3 eggs (large)
  • 2/3 cup whole milk
  • 2 tbsps rum
  • 1/2 cup sugar
  • 1 cup walnuts
  • 2/3 cup raisins
  • 2/3 cup pine nuts
  • 1 1/2 cups soft dried figs
  • 1 package baking powder
  • to taste almonds
  • to taste pine nuts
  • to taste candied cherries

Steps to Make Trentino Zelten

  • To prepare Trentino Zelten, first take the raisins and soak them in rum for about 1 hour. Meanwhile, prepare the other ingredients. Take the butter and melt it in a saucepan, then let it cool. While the butter cools, prepare the dried fruit. Chop the soft dried figs into pieces and place them in a bowl. Roughly chop the walnuts; I used a knife. Add them to the bowl with the figs. Then add the pine nuts. When the raisins have softened, squeeze them well from the rum with your hands and add them to the other dried fruits.

  • Now take a large bowl, beat the 3 large eggs with the sugar using an electric whisk; they should become slightly frothy. Then add the liquids. Gradually add the whole milk and the melted butter, which should have cooled by now. Then sift the all-purpose flour and baking powder. Add the flour and baking powder to the mixture and mix well. Now add the dried fruits and mix well with a wooden spoon to incorporate everything.

  • Meanwhile, preheat the static oven to 350°F. Now take a 9-inch springform pan and oil and flour it well. Pour the mixture into the cake pan and try to level it well, using a wooden spoon or a spatula. Then create the decoration. I made central flowers with candied cherries and almonds and added some pine nuts on top. But feel free to decorate as you prefer. You can also create a ring of walnuts and cherries around the edge of the cake.

  • Bake the cake and cook it for about 45 minutes. Remove from the oven, let the whole cake cool well before removing it from the pan. Your Trentino Zelten is ready to be enjoyed or given as a gift to friends and family.

Storage and Tips

You can store the zelten for about 2-3 weeks or even longer in a container, covered with plastic wrap, kept in a cool place.
