Turkey Minced Meat Sandwiches

The turkey minced meat sandwiches are a unique and different second dish. They can be filled as you like; I chose speck and smoked scamorza, but you can add ham and cheese, vegetables, salami, you name it. They cook in 20 minutes and will impress your guests. Ingredients to prepare turkey minced meat sandwiches

  • 14 oz ground turkey
  • 2 tablespoons Pecorino Romano (grated)
  • 4 tablespoons breadcrumbs
  • to taste salt
  • to taste pepper
  • to taste herbs
  • 1 egg
  • 2.8 oz sliced speck
  • 3.5 oz smoked scamorza

Steps to make turkey minced meat sandwiches

  • To prepare the turkey minced meat sandwiches, first take the minced meat and put it in a large bowl, add 1 egg, 2 tablespoons of grated Pecorino, 4 tablespoons of breadcrumbs, salt, pepper, and herbs as desired; I used pre-prepared sage, rosemary, and thyme, and mix the mixture well with your hands. Once ready, divide the mixture into two parts and try to compact one part on a sheet of parchment paper, trying to make two squares using your hands or a rolling pin if you prefer. Do the same on the second sheet of parchment paper.

  • On the first square, place the slices of smoked scamorza and speck. Now close with the second square of meat prepared previously. Cut first into four parts and then into triangles.

  • Place them in the refrigerator to rest for about 30 minutes. Meanwhile, preheat the static oven to 356°F, drizzle them with a little extra virgin olive oil, and bake for about 20 minutes.

  • Take them out of the oven and enjoy them! Perfect to accompany with sautéed or grilled vegetables.

Storage and tips

You can store cooked sandwiches in the refrigerator for 2 days. If you want to keep them raw, you can store them in the refrigerator for 1 day. You can also freeze them if desired.
