  • 0.8 cups all-purpose flour

Steps to make zucchini pizza with speck

  • To prepare zucchini pizza with speck, first remove the ends of the zucchinis and wash them well under running water. Grate the zucchinis with a large-hole grater. Then place them in a colander, add a pinch of salt, and let them drain for a good half hour, squeezing them occasionally to remove most of the water. Now squeeze them well with your hands and place them in a large bowl. Add the all-purpose flour, salt, black pepper, and egg, and mix well with a wooden spoon. The mixture should be soft but fairly compact. Now take a rectangular baking sheet and place a sheet of parchment paper on top. Transfer the zucchini mixture onto the baking sheet and level it well so that it is uniform across the sheet. Meanwhile, preheat the convection oven to 356 °F.

  • Bake the zucchini base for about 20 minutes. The base will become nicely compact. Take it out of the oven. Now take the tomato sauce and pour it into a small bowl, adding a pinch of salt. Spread the zucchini base with the tomato sauce, then add the pizza mozzarella; I recommend this one as it is dry, otherwise it might become too liquid. Alternatively, you can also use regular mozzarella, but you will have to let them drain for a couple of hours first. On top, add some thinly sliced speck. Put the zucchini pizza back in the oven for about 10 minutes, still at 356 °F, just enough time for the mozzarella to melt and become golden brown.

  • Take the pizza out of the oven. Let it cool slightly and serve. Your zucchini pizza with speck is ready to be devoured. Super good!
