Soft Apple Cookies

Soft apple cookies are delicious, simple, and quick to make, perfect for breakfast or a snack for both adults and kids. Just mix eggs, sugar, butter, and flour in a bowl, add chopped apples, and then, without even letting the dough rest, portion the dough directly onto the baking sheet using a spoon.

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 7 tbsp butter
  • 2 3/4 cups all-purpose flour
  • 1 packet baking powder
  • 2 apples
  • as needed powdered sugar (for dusting)
  • as needed ground cinnamon

Steps

Let’s start making the soft apple cookies.
In a large bowl, beat the eggs with the sugar until you get a fluffy and frothy mixture. Add the soft butter, cut into pieces, and continue to mix until well combined with the other ingredients.

Add the sifted flour and baking powder, mixing with a spoon, until you have a homogeneous mixture.

Peel the apples, remove the core, chop them into pieces, and add them to the batter, mixing with a spoon to combine everything.

Line a baking tray with parchment paper.

Using a spoon, form the cookies directly on the tray, without worrying about getting a regular shape, spacing them apart as they will expand during baking, and continue until you have used up all the batter.

Bake in a preheated static oven at 356°F for 20 minutes, then remove them and let them cool.

Mix the powdered sugar with the ground cinnamon and sprinkle it over the soft apple cookies.

Storage
