Ingredients for Potato Stars

  • 2 potatoes
  • to taste salt
  • to taste dried oregano
  • to taste extra virgin olive oil
  • 2 tablespoons breadcrumbs

Steps for Potato Stars

  • Peel the potatoes and slice them about half an inch thick. Using a star-shaped cutter, cut out many little stars. Slightly grease a baking tray with a drizzle of olive oil, then place the potato stars on it in a single layer. Sprinkle the stars with breadcrumbs, a pinch of salt, and a bit of oregano. Add another drizzle of oil on top. Bake in a static oven at 392°F for about 15-20 minutes, until the stars are golden and crispy. Remove from the oven and enjoy them hot, accompanied by good mayonnaise.
