Yesterday, the greengrocer had some very colorful and fragrant spinach on the counter, and I couldn’t resist buying some to cook something special. I had some chicken breast in the fridge and many ideas in my mind. In the end, I decided to make chicken and spinach cutlets, which are breaded chicken and spinach cutlets available frozen in every supermarket. I assure you that homemade ones are exceptionally delicious, nothing compared to the ready-to-cook store-bought ones.
If you use fresh spinach like I did, you can freeze them and use as needed, as they keep very well.

Ingredients for Chicken and Spinach Cutlets
- 14 oz chicken, whole, skinless, raw
- 2 eggs
- 7 oz spinach
- 1.25 cups breadcrumbs
- 2 oz grated Parmesan cheese
- to taste salt
- 2 eggs
- to taste breadcrumbs

Steps for Chicken and Spinach Cutlets
First, wash the spinach leaves thoroughly to remove any soil residues. Immerse them in a large bowl full of water and wash them with your hands several times, then drain them well. Take a large pot without adding water, the remaining water on the leaves will be enough.
Cover with a lid and cook the spinach on low heat for a couple of minutes, when they are wilted you can drain them.
Once cooled, take a blender, chop the spinach, and then the chicken piece.
In a bowl, put the chicken, spinach, eggs, grated Parmesan, and a bit of salt.
Mix with a fork and add all the breadcrumbs.
After mixing everything well, start forming the cutlets, flattening them slightly with your hands as you see in the photo.
Once ready, dip each cutlet first in beaten egg, then in breadcrumbs, using a fork to avoid breaking them.
Take a baking sheet, drizzle a little oil, and place the cutlets spaced apart. Add a bit of oil on top and bake for 20 minutes at 340°F (convection).
For cooking, you can choose how you prefer; I chose to bake them for my little one, but you can fry them as well.
Now you just have to eat them nice and hot, but I can assure you they are delicious even cold!!!

Can they be frozen?
You can freeze the cutlets without cooking by placing them on a tray with parchment paper in the freezer spaced apart. The next day, you can transfer the cutlets to a food bag and put them back in the freezer. When using, just cook them directly in the oven or in a pan.
